These have been a family favorite for a few years now. Our toddler loved these up until his 2nd birthday. But I am bound and determined to get him to like these little patties again. They’re so good and made with protein packed quinoa, spinach, eggs and feta. Mark and I enjoy a little hot sauce on top of these for a little kick in the pants.
Spinach Quinoa Patties
1 cup uncooked quinoa
2 cups spinach, rinsed well and chopped fine
1 tablespoon onion powder
1/2 teaspoon garlic powder
1 cup of feta cheese, chopped small
Cook quinoa according to package. Set aside. In a large mixing bowl, mix quinoa with eggs, finely chopped spinach, garlic and onion powder and feta. Mix well.
Heat a large skillet with a little olive oil over a medium, to medium-high heat. Scoop a heaping tablespoon size amount of mixture into heated pan, gently pressing down and tucking in sides to maintain pattie form. Let cook on one side for 3 minutes, then flip and let other side cook for another 2-3 minutes, until lightly browned on both sides. Repeat with remaining mixture (I use a large skillet and can fit about 6 patties at once, to speed up cooking time).
