It’s hot hot hot, here in Tucson. These banana fudge pops help to deal with all of that heat. Oliver calls them his “Chocolate milk popsicles.”
They take minutes to whip up before they are off to set in the freezer. I found this mold at Costco last summer, but any popsicle mold will work just fine.
These popsicles are healthy too, with no added sugar! They only have three ingredients – very ripe bananas (with lots of brown spots!), coconut milk and cocoa powder. Pretty amazing, right? So are these pops. Not only does my toddler love them, I love them.
Banana Fudge Pops Recipe
Recipe adapted from Baby Boy Bakery
Ingredients for about 6 Popsicles
1 cup whole fat coconut milk
2 very ripe bananas (with lots of brown spots), frozen and chopped
1 tablespoon cocoa powder
Popsicle mold with sticks
Put all ingredients into a blender and blend until smooth. Pour mix into molds, leaving a half an inch space at the top. Place sticks in the middle and put into the freezer. Freeze for 3 hours, or until completely frozen.
