I got really into these energy bites last Spring when our second son was born. The first couple of months I found it difficult to find time to cook, clean, do laundry, do anything. These quick to prepare granola energy balls came to the rescue on most days. I first made the No-Bake Energy Bites here, using peanut butter as the base, but wanted to find another way to make them using different nut butters. This combination of dried cherries and almond butter (Optional: add shaved chocolate!) ended up being one of my favorites. It’s the perfect quick snack to take on the go.
No-Bake Granola Energy Balls Recipe
1/2 cup all-natural smooth almond butter
1/3 cup pure maple syrup
1/2 cup old fashioned rolled oats
1/3 cup unsweetened shredded coconut
1/2 teaspoon ground cinnamon
1 tablespoon wheat germ
1/4 cup dried cherries, chopped fine
1/2 cup crispy brown rice cereal (or regular crispy rice cereal)
*Optional: 1/4 cup mini chocolate chips or regular chocolate chips, chopped fine
Place all of the ingredients into a large bowl and mix until well combined. Scoop about a tablespoon size amount of mixture and roll into a ball. Repeat until done.
If mixture is too dry, add another tablespoon of peanut butter or maple syrup until it reaches a good consistency to where the balls hold together nicely.
Store in a zip-lock bag in the refrigerator for up to a week.
