I recently stumbled on chocolate covered sunflower seeds and now I’m obsessed. They are so so good. So good I thought they would be good in a cookie. I also love that they are colored with all-natural food dyes – total bonus and oh so pretty!!
Chocolate Sunflower Seed Oatmeal Cookies Recipe – I found chocolate covered sunflower seeds with all- natural dyes at Trader Joe’s, but if you don’t have a store in your area, sub chocolate chips and sunflower seeds instead.
1/4 cup butter (1/2 a stick of butter)
1/2 cup dark brown sugar, lightly packed
1 large egg
1 cup all-purpose flour or whole-wheat pastry flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 /2 cup old fashioned rolled oats
1/4 cup chocolate covered sunflower seeds OR 1/4 cup mini chocolate chips and 1/4 cup sunflower seeds
Preheat oven to 350 degrees Fahrenheit.
Cream butter and sugar together in a medium bowl. Add egg and beat until well combined. Stir in flour, baking powder and salt and mix gently until just combined (don’t over mix). Add oatmeal and chocolate sunflower seeds and mix until just combined. Scoop tablespoon size dough and roll into balls and place half an inch apart onto a parchment-lined cookie sheet. Gently press dough down to flatten lightly. Bake for 10 minutes.
