Zushi

A while back I was invited to a pre-opening party for Whole Foods. We were treated to food and awesome swag. Some food demonstrations took place and zushi, was one of them. I fell in love with the idea and couldn’t wait to make them at home with Oliver. These come together easy and are incredibly fresh and tasty. The original recipe used goat cheese and sun-dried tomatoes, but since I have a boy with a picky palette, we subbed cream cheese and carrots. The taste is fresh, crunchy and bite size.

Using a potato peeler, shave off the first layer of skin from your zucchini. From there you can shave off thin ribbons of zucchini for your zushi.

Slice carrots into matchsticks, and chop sun-dried tomatoes into thin strips, if you’re using them. Spread a thin layer of cream cheese onto your zucchini strip, sprinkle with Italian Seasoning or my favorite, Penzeys Sandwich Sprinkle, or salt and pepper. Place a small bundle of sliced carrots at one end and roll.

Zushi Recipe

1 zucchini

1 carrot

Cream Cheese

Italian Seasoning, or I like Penzeys Sandwich Sprinkle

Optional – sun-dried tomatoes

Using a potato peeler, shave off the first layer of skin from your zucchini. From there you can shave off thin strips of zucchini for your zushi. Slice carrots into matchsticks, and chop sun-dried tomatoes into thin strips, if using.

Lightly smear cream cheese on zucchini strip, sprinkle with salt and pepper, or favorite seasoning. Place sliced carrots or sun-dried tomatoes at one end and roll starting from that end.
