This is something I would make for Oliver when he was a baby. Now it’s one of Henry’s favorite things to eat. It’s nothing fancy, just sweet potatoes cooked with kale and blended together with a little sauteed garlic (garlic can be omitted). I like to leave it a little chunky for Henry since he’s at the stage where he can eat (and loves) chunkier foods, but you can make this as smooth and thinned out as needed for your baby.
Kale & Sweet Potato Mash
1 sweet potato, skinned and chopped small
1 cup chopped kale leaves, stems removed
A dash of garlic powder
Steam sweet potatoes and kale until soft (about 10 minutes) and put it into a blender or food processor. Add a dash of garlic and blend until you reached desired consistency. Add liquid from steamed veggies if you want it thinned out more.
Allow to cool before feeding it to your baby.
