The morning’s are getting cold and crisp here in Arizona and just screaming for warm cozy pajamas and wholesome spiced breakfast ideas to start the day. Granola is a staple in our household. I’m constantly trying to find new ways to make different batches with flavors we love most. Sometimes I’ll use it as a breakfast cereal with warmed almond milk, but our favorite way to eat this is in yogurt parfaits. We layer plain Greek yogurt, chopped apples and granola, sometimes with a swirl of honey or maple syrup on top, but the apples and granola are usually sweet enough.
Preparing granola before it goes into the oven something kids love to help with. It doesn’t hurt to mention that this also makes a wonderful gift packaged up with a neat bow (or messy) for teachers, friends and family. I mean, who doesn’t love granola?
This apple spiced granola is everything for this time of year. It has the delicious classic granola flavors mixed with spices, sweet maple syrup, and the tartness of dried apples.
Apple Spice Granola Recipe
5 cups old fashioned rolled oats
1 1/2 cups chopped walnuts
1/2 cup slivered almonds
1/3 cup pure maple syrup
1/3 cup brown sugar, packed
1/2 cup coconut oil
3 tablespoons apple butter, or apple sauce
2 teaspoons pure vanilla extract
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon ground ginger
1 cup dried apple chips
Preheat oven to 325 degrees Fahrenheit.
Mix all of the wet ingredients together in a large bowl. Add spices and salt and stir. Then stir in dry ingredients until nuts and oats are well coated.
Pour onto a large cookie sheet and press down with a spatula to flatten granola. Bake for 20 minutes, give it a stir and then place back in the oven for another 10-15 minutes. Allow granola to completely cool before storing in a jar or zip-lock bag.
