This combination is a nice way to get your babies greens in.
Spinach & Sweet Potato Mash – leftovers can be frozen
1 cup of fresh organic spinach
1 medium organic sweet potato
water and/or apple juice
Directions
Chop sweet potato into 1 inch cubes and roughly chop spinach. In a medium pot toss spinach and sweet potato in and fill with water or apple juice (or equal parts) just enough to cover the chopped veggies.
Bring to a low boil and cook for 10 minutes, or until sweet potatoes are tender when poked with a fork.
Drain veggies, reserving part of the cooking liquid.
Pour cooked spinach and sweet potatoes into a food processor and pulse until you reach a smooth consistency. Add a couple of teaspoons at a time of reserved cooking liquid to get a thinner consistency if needed. Alternatively you can use a potato masher for this.
Cool before feeding to baby.
