Spinach, Peas & Sweet Potato Mash
Ingredients – Leftovers can be frozen.
1 small sweet potato, peeled and chopped into 1 inch cubes
1/4 cup organic peas, rinsed well
1/2 cup organic spinach, rinsed well
Place all ingredients into a medium pot and fill with water, just enough to cover the tops of veggies. Boil for 10-15 minutes, or until sweet potatoes are tender when poked with a fork.
Drain liquid, reserving a small amount for later.
Pour cooked veggies into a food processor and pulse until smooth, adding some of the reserved liquid if needed, depending on the consistency you want to achieve.
Let food cool before feeding to your baby.
