
This was one of the first foods I started Oliver on. Sweet potatoes are a wonderful first food and babies seem to love them. Mixed his with apples and it’s just hard to beat.
For babies 6 months and up.
Sweet Potato & Apple Mash - Leftovers can be frozen.
2 small organic sweet potatoes, rinsed well
2 medium organic apples, rinsed well
1/4 cup water or organic apple juice, plus more if needed
Core and peel apples, then chop them up into 1 inch cubes. With a potato peeler, peel skin off of sweet potatoes and cut into 1 inch cubes. Place apples and sweet potatoes into a steamer and cook for 10-15 minutes, or until tender when poked with a fork. Place ingredients into a food processor or blender, add a little water (about 1/4 cup at first) and pulse until you reach a smooth consistency. Add more liquid if needed.
*Alternatively you can boil in a pot with just enough water to cover the tops of apples and sweet potatoes. Cook on a low boil for about 10 minutes, until tender when poked with a fork. Drain off part of the liquid, reserving a portion to blend with. Blend ingredients until smooth, using reserved liquid if needed.
