Rutabagas aren’t the prettiest thing in the produce department, but they sure are nutritious and tasty. Good for babies 6 months and up.
Rutabaga Mash – Leftovers can be frozen
1 large organic rutabaga, peeled and cut into 1 inch cubes
2 medium organic apples, peeled and quartered
Directions – This recipe can be cooked in a babyfood maker, like the Brezza. Another alternative is to steam food, then puree with a little added liquid until desired consistency is reached.
Add cubed rutabaga and apple to a medium pot and fill the pot with water, just enough to cover the tops of the apples and rutabaga. Bring to a low boil and cook for 8-10 minutes, or until tender when poked with a fork.
Drain off liquid, reserving a small amount in a separate bowl.
Place rutabaga into a food processor and pulse until you reach a smooth consistency. If it is too thick then add some of the reserved liquid to reach the consistency you want to achieve.
Cool before serving to your baby.
