Some people might think a “smash” cake is a weird thing to give to a baby – but to be realistic, it’s what a baby does to any sort of food it’s near, they “smash” it, smoosh it, and destroy it before putting it into their little mouths.
What I loved about this cake was that it had little sugar in it. Actually, it has no refined sugars in it at all, only applesauce and pure maple syrup to sweeten it.
Baby’s First Birthday Cake Recipe

1/2 cup of quinoa flour
1 cup of whole-wheat pastry flour
1/2 cup of organic milk (soy or dairy)
1/4 cup organic applesauce
1/2 cup organic apple juice
1/4 cup olive oil
1/4 cup pure maple syrup
2 1/4 teaspoons baking powder
1/4 teaspoon salt
1 1/2 teaspoon pure vanilla extract
Maple Whipped Cream Frosting
6 ounces of organic whipping cream
1-2 tablespoons pure organic maple syrup or evaporated maple sugar
**Optional frosting - Mix cream cheese with vanilla yogurt, then spread on cake.
Preheat oven to 375 degrees Fahrenheit.
Lightly oil a 6″ or 8″ baking pan and set aside. In a medium mixing bowl, mix flours, salt and two teaspoons of baking powder together.
In a separate mixing bowl, mix applesauce and 1/4 teaspoon of baking powder together. Stir in oil, apple juice, vanilla extract, and milk.
Pour wet ingredients into the dry ingredients and stir until combined. Pour cake batter into greased cake pan and bake for 25-30 minutes, or until toothpick comes out clean once inserted.
Let cake cool before frosting.
For the frosting
In a standing mixer, pour in cold whipping cream and beat on medium until it begins to form soft peaks. Add a tablespoon of pure maple syrup, or evaporated maple sugar and beat until stiff peaks form. Add more syrup or sugar to your liking.
Once cake is cooled spread whipped cream over cake and decorate to your heart’s desire.
